About Copper Birch
Copper Birch opened in 2016 in a former hardware store on East Lake Street. For the first three years we served other roasters' beans; in 2019 we bought an 8 kg roaster, moved it into a garage on 31st Ave, and started roasting everything ourselves.
Today a crew of eleven runs the bar, the ovens, and the roastery. The pastry case is baked on site starting at 4 a.m., the pour-over list rotates through 14 single origins a year, and the espresso cart covers weddings and office events across Minneapolis and St. Paul.
We publish roast dates on every bag and never serve coffee more than nine days off roast. If a batch misses, it does not go on the bar.
Word of mouth
They print the roast date on the bag and it is never more than a week old. That is the whole reason I stopped buying grocery store coffee.
Booked the cafe for a 40-person retirement party. Staff handled drinks, trays, and cleanup, and the bill matched the quote to the dollar.
The morning bun is the best thing on Lake Street before 7 a.m. and I say that as someone who has tried everything else.
